I'm pretty sure they won't shut down the servers for at least the 10 years the franchise is supposed to last. It'd be different if you were concerned with the servers randomly going out because of some internal problem, but as for them intentionally pulling the plug, we've got a long way to go before that happens.

^this^. Or if your ISP has an outage...right when you need a Destiny fix. Would be nice to have an offline mode for such instances. But then you would get into the whole stat tracking being stored on the net and not being able to progress in an offline mode.
