I most likely won't do any content creation. And for games I would want to play AAA games on at least medium settings at 60 FPS.

Resolution and framerate? Can't lie, I'm struggling slightly with the budget. I would like to include an ssd boot drive, 16gig ram, and a branded & rated power supply. I'm not super firm on that processor... I know the board is socket 1151, but I'm not sure how long your upgrade path is. Aaaand I'm not sure how good a value proposition chips in that arc actually are. Is it worth upgrading.... I mean yeah? But what are we upgrading to? 1660 isn't the strongest or most future proof (future proof is a myth anyway, I like "future resistant") but it's an ok-ish entry level card. Entry level. Which is kinda why I'm asking about displays. I'm biased toward building... but for an entry level build... entry level build it ain't... terrible. I'd really like to see 16 gig ram though.

Yeah, it'd be nice if I had 300 more dollars lol. I can get an SSD boot drive for free with it, and I might be able to get more RAM later. For the display I doubt I'll be using anything higher than 60hz, if that's what you mean.
