I get that it’s a hard mode that gives you better rewards and a chance to acquire missed items and redo missed missions and perhaps a different ending to the story, but I had only seen this from Fromsoft.
Elden ring was the first game I played that has NG+ modes, I liked it so much that I bought AC6 which I found out also has an NG+ mode. Now I come to find that Starfield has one as well, which is something Bethesda hasn’t done to my knowledge. Is there more to what I understand about NG+?

The worst part of playing a game you like for the second third or hundredth time is that you have to play the game exactly the same way and unlock everything you spent so much time grinding for all over again. NG+ allows you to start the game again but with all of the perks, skills, weapons, etc unlocked from right the start. Usually it’s a kind of cheat mode and is a reward for finishing the game. Some games use it for putting even harder difficulties in the game (like the Permadeath mode) and some just use it to be silly. A lot of older games had unlockable modes where you could play through the whole thing with disco balls everywhere, or with all the NPCs having one specific model, or other such crazy things.

It's just replaying the game with stuff you've unlocked on your first playthrough. Sometimes it unlocks new things, like new bosses missions or difficulty, but not always.

What's hard to understand about it? You're starting a new game with all the stuff you had in your previous playthrough. Plenty of games have had this long before Dark Souls

Without getting into major spoilers, ng+ does tie into the lore with Starfield. If you’re curious as to what you keep and lose, again no lore spoilers: [spoiler]You lose your credits, gear, and any ships you’ve obtained. The plus side is you keep your level, perks, research, and anything in the “top of the inventory circle”. Also, there are some extra dialogue options available.[/spoiler]

Typically, it's a new game, but you don't lose anything you got from your previous playthrough. Sometimes, the difficulty is increased, and sometimes, new content becomes available. Games that have it want to encourage you to play the game more than once. In Armored Core 6, the difficulty does not increase, but you do gain access to new content, which is harder than the old content. For every game, you'll have to look up what exactly new game + does because they never tell you everything.

The first time I happened upon 'New Game Plus' was with Chrono Trigger, supposedly the first game to include the option. In that it allowed the player to play through the game again with all levels, abilities, and gear they had after completing it the first time. It also unlocked the multiple ending paths for the game as well. I can't say when the increased difficulty aspect came into play with the mode.
