Alas was originally created by humans to collect scientific data and is located in the center of the universe. Atlas realized that the humans were destroying resources and animals which could be used as valuable data so it created and or took control of the senitals to prevent anything from destroying data. Atlas then destroyed the humans and the survivors were scattered across the universe (hence why you start in a life pod because you escaped). Atlas now enforces these rules strictly and eliminates any threats to collecting data.
The reason humans are not killed by atlas immediately is because they pose little threat in small numbers.
The red spot seen on atlas possibly represents corrupted programming which may have caused atlas to go against its creators.
When you reach the center of the galaxy you will have a choice to kill atlas. If you choose to kill it, all senitals will be shut down and you can mine and kill animals without being attacked by senitals.

Im guessing the center wont be reachable, at least for a VERY long time, like a decade of some crazy guy playing every waking moment. I feel like its the devs artistic choice of showing and sharing the basic attribute of human curiosity, that we'll keep exploring even if we never reach an end goal

I think the sentinels only control this Galaxy. When you get to the center, there will be a major sentient A.I. controlling them all, and it will let you warp out(maybe through a black hole/worm hole) to another Galaxy(or maybe our characters home Galaxy?) where there are no sentinels, further emphasizing how big the universe is, and we find out our origin, what happened to this Galaxy, and why we start on the edge of this Galaxy. It could also be a Utopian hub world, where every player can then meet up, and explore space together, since after getting to the center, you have "beaten" the game. Also my other theory, is that the milky way Galaxy is destroyed, and all that's left of our species is trying to get to the center of the nearest Galaxy (every player is a human and spawns somewhere on the edge of the Andromeda? Galaxy) to meet up and preserve our species. And when we do, we learn that the sentinels obliterated us for killing our own planet (Earth, maybe whole solar system and beyond), and deem us a threat to all life, which is why they are so aggressive to us.
