So on the ambush scope it says -10 does this mean it takes off AA?

The line is just there to correspond the scope to the number. Like this: Scope - number

That's what I came across yes. I've heard all score values are placebos though (rumour)- if this were true then no scope would add or take away AA. I haven't found anything to confirm.

So if I was to get the wayloran's March with the sightsys scope I would have over 100+ aim assist? Wouldn't that be ridiculous?

I believe aim assist is a percentage, so if that were true it would cap at 10, but possible with that sniper. It doesn't mean it's 100% aim assist as in the game aims for you, aim assist will help you out to a certain extent, and 100% AA will just mean it will help you to the full extent possible.
