Hey there,
This Week's Ascendant Challenge is not complete once you open the Chest. To complete the Speedrun CHallenge in the Keep of Honed Edges, you will have to enter the portal after completing the encounter and leave the Ascendant Plane. Once you did that, the Triumph should appear.

I don’t believe I did, I think most of the other triumphs didn’t require you to exit to complete. Thank you for the response, I’ll try again tonight!

You're correct, most of the Speedrun Triumphs don't require exiting the challenge. This one does for some reason. I had the same issue until I figured it out myself. Let me know once you got it! :)
