Today I learned that skipping enemies means you are smart and good.
Personally, I don't let a single enemy live. If you want to skip to the boss then you can enjoy doing 1/3 damage until I get there.

By the time you get there the boss is dead. I like to leave one or two alive to go and spread the myriad legends and myths that keep the kobold or fallen sentries awake and clutching their rifle at night.
