Never buy from sellers who use the word "fermented" instead of "oxidized" unless referring to puer tea. 3. Never use large tea pots for brewing oolongs. Yixing pots are preferred. 4. Green teas must be brewed with water no hotter than 175 degrees (79 degrees Celsius) 5.
