Shotgun melee or sniper headshot worked just fine. Also running away was and option, and team shooting if they were coming at you from a distance. If you're 20 feet from a sunbreaker with no cover leading to an escape route you're -blam!-ed. Not that I care, everyone should just stop whining. Yeah the sunbreaker super is very op, but it's the only benefit the class has besides skating and health regen on ability kills. There's literally nothing else.
