Once you talked to the king with the 3 crowns he does two things to you. You cannot be cursed and if you have the crown on when you die you don't lose your humanity. Keep in mind this is only for the current playthrough you are on, so when you go to the next new game you gave to get the crowns again. That's the only thing they do.
