Kill the first one on the platform, then stay on the platform. The second one will jump up, and you should be able to get it down to around half health, if not outright kill it before the third one jumps up. At this point it's up to you, either finish off the second one on the platform then fight the third, or drop down first, then finish off the second one and fight the third one.

Kill the first one on the platform before jumping down to the floor. Taking on 2 is infinitely easier than all 3 at the same time.

Okay, try the craftmans hammer with the magic weapon sorcery. Or summon an npc and maybe wear the ring from the freaky cat in Majula to attract enemies while you hold a tower shield to let the npc do all the work.
