at the iron keep now,
And I know the smelter demon and old
Iron king are here, is the smelter required to progress? I might just beat the iron king and
come back for smelter if that's the case

The Aged Smelter Demon is not required to beat the DLC. He's actually really annoying since you have to fight past enemies to even reach him instead of having a bonfire almost directly beside his area.

There are two versions of the Smelter Demon: the original in Iron Keep, and a new version in the "Crown of the Old Iron King" dlc. This is where you'll find the Aged Smelter Demon he mentioned, although it is true that both versions are skipable.
