Flying to Mt. Doom would be like trying to fly over the White House. Sauron would have seen them coming and shot them out of the sky before they even got close.

We know that the eagles are more than a match for (and vastly outnumber) the Nazgul/Fell-beasts.

The eagles can fly above the clouds, higher than mountains. No Orc is going to be able to shoot that high, let alone actually hit a moving target at that distance. The Return of the King also proves that the eagles can destroy the Fell Beasts, and Gandalf has already demonstrated that he can use his powers to scare them off (also in RotK). As far as the movies are concerned, there is no reason why they couldn't have used the eagles.

They would have to stop at one point, and they would be very easily ambushed at that time. Sauron's servants are everywhere. -A long flight is very likely to have at least some effect on the Ring, especially because it knew that Sauron had returned at the time. -Sauron's eye would prevent the Eagles getting through, in the context of the movie.
