Everyone uses the same load out in Iron Banner because its effective. I have nothing against originality or trying to be unique with the load outs. Since Iron Banner is only active for 1 week each month I think people would just prefer to be efficient get what they came for as fast as they can and sadly trying new load outs and trying different weapons will slow that process down.
Normal Crucible should be the place for originality, even though it's really not. I personally try different things in Normal Crucible but I stick to what's working for Iron Banner.

Only downside is that it gets boring long before you get anywhere near finished. I'm currently in the red zone right now. I'm half tempted to either quit or just afk if I fail to get the heavy ammo and get one kill. This is so freaking boring...

Being effective and efficient normally is boring. If your not too concerned about getting Rank 5 you can always try new and unique load outs on Iron Banner. From time to time I tend to do that to bring more "fun" into Iron Banner. Then again I find it fun and challenging trying new load outs that can work effectively against the current "go-to" load outs for Iron Banner. Making Iron Banner fun is completely up to the player. The only time it's out of the players hands is when the game mode makes it irritatingly hard to win with a PuG going up against a 6 man fire team. In game modes like Control or Rift where a 6 man fire team is almost guaranteed a win unless the other team suck so bad.

I might enjoy myself more if this were control. Right now, it is painfully, painfully boring. I might not even finish it on any character this week

To each his own and I don't speak for everyone but getting stomped on by a 6 man fireteam and being powerless to do anything about it (since it's close to impossible to coordinate well with PuGs who could careless about teamwork) repeatedly isn't very fun for anyone on that PuG team. I find it hard to believe that people find that fun at all nor it's ok to have people constantly leave at mid game because the score is already too one sided.

Yep, this. I'm not great in IB, but I'm not going to fool around with weapons I dont know. However, my load out tends to be arminius-d, telesto, ash factory which seems unusual from what I tend to be killed by.
