Dark souls 3 How to get armor from a boss?

I've seen it in a couple pictures and videos already. Right now I'm at the Abyss watchers, Do bosses just randomly drop the armor or what?

After you defeat a boss, you Can purchase it's armor from the shrine handmaiden.

Certain bosses will have their armor sold by the shrine handmaiden. However not all do this.
