Apologies for everyone sick to the back teeth of posts in regards to SBMM. This is not a complaint post, nor is it a nerf post.
With regards to PvP, as a mainly PvE player I tend to either get slaughtered in the crucible or kill everything in sight with genuinely nothing in between. I have either great matches or terrible ones but no moderate - is that due to the skill based or am I just an okay player who happens to outplay more people in a given match?
I've been trying to improve but need to know if I'm unduly influenced by sbmm or not (I kind of understand how it works), or whether I just suck at PvP in general. 😉

You definitely don't suck. In fact you are above average. I have a similar experience in crucible. Most likely I am playing people worse then me, and then running into guys like you. I have a feeling that the system looks at a range of skill, and it may weight it based on recent performance to which end of the range it matches you with. For example, if you have won a few matches, it will put you against players at the higher end of the skill range. If you have lost, they bump your opponents down the skill range. Just a theory. No proof.

You might be barely on the edge between two spectrums. Some games you get paired with guys that are technically in what Bungie considers your "skill range", and other games you fight guys that are technically a little bit better than you. It also might be a product of Bungie's system that tries to guarantee a 1.0 W/L ratio.
