Every Android phone runs on a version of Android (2.3, 4.0, 4.1, 4.2 etc. etc.), but each phone maker (Samsung, HTC, LG, etc. etc.) puts their own skin on it. CyanogenMod is their own skin on the Android OS, except it is 100% free of bloatware, which is very nice, and it's version of Android isn't as taxing on the phone as other versions of Android are.
Ya, but you can do that without even having install. All you would have to do is root your phone (which you would have to do anyways if you want to install CM), then install Titanium Backup, then find the apps that you don't want and uninstall them.
The rooting process actually isn't. Should only take a few minutes. Now, getting CyanogenMod onto your phone...that will take some time, the first time you do it anyways.
