Having 30+ different skill trees.
I'm good with just a few, but that's one of the things that is just a pet peve of mine.

Customization and variety can add to the replay value, but at the same time you can go overboard, as you stated. Sometimes it [i]is[/i] nice to have a simple, yet meaningful path to advance through instead of a slew of arbitrary abilities that add little to your gaming experience.
