A list of useful stat trackers to add back, plus a bonus one ;)
---Solo, flawless dungeon completions (not just Pit of Heresy)
---Prestige Raid clears
---Infamy resets (personally I had over 20. Sucks to see em gone)
---Valor resets
---Crucible win percentage from last season's emblem
---Haven't checked yet, but "Kills with a snowball" is one of my all-time favs
I like that sherpas have been added. Hopefully you can add lifetime sherpas so we can see em from now until...
Another emblem that hasn't been in the game but I feel every pve player would love is, "Highest raid boss damage dealt."
Can be customized for each specific raid. *think about it*

Heavy as death. I haven't seen it listed in the ones they're bringing back. That's my favorite one. A lot of fond memories tied to that.

I'd like to see the annual event trackers readded. Things like branches cleared for Revelry and Festival of the Lost, triumph score for Solstice of Heroes, snowball kills for Dawning, etc. Just the random stuff that's more about the friendly competition and having fun, since that is why we play games in the first place.

They should've informed us so we don't waste time and effort on getting emblem stats

All of them, we need more stats not less, and then somehow end up thanking them for adding less than they took away. If they still haven't learned after all these years that people like stats & rankings & want to show them off, God help us all for the 3 stats tracked in D3, Silver bought, Silver Spent & f'ing baboon errors.
