Knight is the easiest in my opinion. Once you get there try out the Hiede Lance, it's an amazing weapon, I also like the bastard sword, not as slow as the normal greatswords but does nice damage, of course, they fit my playstyle but yours may be different. Are you on original or SotFS? [spoiler]☀️
