I've done both a sorcerer & cleric build. Preferred the sorcerer, but both were fun. 'Cause magic.
And no, I didn't use the cheesy laser beam spell. I forget what most of the spells are called, but my main spell was the Farron Dart equivalent, and that big wave spell. I would switch over to the Soul Arrow equivalent for enemies that were tanky enough, as well as that one spell that fired a barrage of homing blasts. Of course I had other spells for other situations, but those were my main four.
I just used what worked in context. No build. Probably more dex/strength. Picking a single build and sticking to it for a full game holds very little appeal to me at all.

Graven School, Graven Mass, Radagon Icon, flex slot like Magic Scorp, Greashard of Alexander. Maybe Bullgoat in pvp depending on how we roll armor and what the weapon is. Big greatshield with the dragon. There's some other spice but I forget.
Meteorite Staff until other staves start out scaling it where Meteorite can't be upgraded. Double Staff of Loss for that Night Comet. Carain Regal Regal Scepter because it's the best general overall sorc scaling (and we only get 1 Staff of Loss per run unless we trade/mule/etc). It boosts Rannis Moon which we can use to pop frostbite. Carain Glintblade, maybe Lusat's in PvP or for certain bosses.
For melee... Wing of Astel, Cold or Magic Milady (Frost Stomps, DLC Carain Art, Glintstone Pebble and the followup heavy attack), Cold Clayman Harpoon, Glintstone Kris (weapon art is like Comet and it lowkey slaps in PvE). Moonveil still goes hard.
Spells vary. Except for Greatblade Phalanx, and Magic Glintblades in PvP. Those force rolls that we attempt to punish.
Why... TLDR basically, Int casters get Greatblade Phalanx and magic glintblades in pvp. Plus a couple DLC spells I'm not sure I should mention? Not sure how far along folks might be.
It's also a single damage stat whether we want melee with Carain Swords or ranged blue spam.
2nd and 3rd choices are Dragon Communion (dex/fai/arc) and Dragon Cult (Str OR Dex/Fai) related.
Honorable mention to Moonlight Greatsword. My preference is dex this time around because cast speed. But MLGS/Death Poker powerstance Str hybrid is STRONK.
