Isn't a robot unisex? What purpose do they serve?

It's because all female exos use to be sexbots while make exos were soldiers. After the darkness came all the females were repurposed when more soldiers were needed.

Where else is an Exo supposed to store their lunch? Also, the bigger they are, the more likely that Exo has refrigeration units installed! Can we say robot nipple straws for an Exo on the go?

There is not a lot of lore behind the exo's, but many speculate that they were humanities attempt at immortality and having fugues reminiscent of their former bodies would aid their consciousness solidification after transfer

If Exo's were made in humanity's image it would make sense for them to resemble humans

In all likelyhood Exos were at one time human, and wanted to have some simblance of what they were before. Other than that, because reasons. :)

They were made to look human, and seeng how they technically have gender it makes sense from a design standpoint.

Preservation of gender/sanity maybe? Exos are believed to be humans who's souls have been transferred to a mechanical body (with our without their consent), so it would make sense.
