Base Leviathan and Last wish get close, but not a single raid in destiny 2 has a raid weapon of every type in it's loot pool. It baffles me that every raid in Destiny 1 had an armour set for each class, and one weapon of each type, but not a single raid in Destiny 2 has the same amount of loot. What happens if someone doesn't want the 5 types of weapons in SotP or CoS? Why is there no Last wish shotgun or grenade launcher despite it being the largest raid in the series? Even Crota's end had a full set of weapons, but SotP and CoS get 5 weapons each including the raid exotic? This is probably a big reason people don't raid very much in Destiny 2. Why would I do a raid if none of my 3 favorite types of weapons are even available? Why go through the trouble of a difficult raid if you don't like any of the weapons you can get? I really hope this is fixed for the raid in Shadowkeep...

Probably because there’s very little diversity with the weapons to begin with. If you’ve got a shotgun with trench barrel, then do you really need another? If you’ve got one with one two lunch, do you really need another? If you’ve got a HC with outlaw/rampage, do you really need another? The honest answer, for most, is no. Until Bungie actually start building real diversity into weapons, I don’t think it matters because the only real differences lately have been the way they look. They might as well just start going down a cosmetic route if they aren’t going to diversify better. Even if they added a few more weapons to each raid people wouldn’t do them more because you only get 3 shots a week and raiders are already completing 3 runs anyways. It wouldn’t get more people raiding in my opinion. There are deeper issues with raids than making sure every weapon type is included.
