Beef, if I know it's going to be good. Often times I'll go with chicken. Undercooked chicken can be very bad for you, but it's also a very easy meat to cook. If I'm the one making it, I'll typically grab chicken over beef because I have some good recipes...or beef because I know I'll get it right and it's the less expensive option. Beef for when I'm feeding guests, I suppose. Deer sausage if I'm feeling fancy.
