1 ReplyFrom video games and legends I would have to say HK-47 and G0-T0, both have the idea of using or building other droid bodies for self-preservation and were quite interesting and dangerous characters. As a comics character I would have to say Jango Fett when he was part of the Mandalorian Journeyman Protectors, technically speaking he was a Mandalorian foundling and truly a Mandalorian and mercenary. As canonical character I would say Count Dooku. He is a Sith, but wants to try and help the war effort for the Confederacy of Independent systems rather than truly be evil. He actually ask Obi-Wan if he would join him so that they could kill Palpatine and destroy the Sith. Not a real bad guy but not a good guy either, an idealist. Other favorites of mine being Cassian Andor, Din Djarin, and The Armorsmith...

My overall favorites were the original series R2-D2 and C-3PO. I'll never understand why they made Threepio gradually more of a punchline in the prequels and sequels. He actually had some tenacity in A New Hope and The Empire Strikes Back. George Lucas has gone as far as to say that the entire Star Wars series is told from R2-D2's perspective.
