Is it not cannon that Engrams are physical items (weapons/armor/etc) that are encoded? I thought that was cannon.

It is canon, you’re absolutely correct. Engrams are gear coded into a Glimmer state So it can only be decoded into whatever specific thing it used to be before it was coded
