Lord Gwyn gives me fits in dark souls. Also Dark beast Paarl in bloodborne is my kryptonite, don't have much trouble with any other bosses except him, I still haven't killed it solo lol

I had a lot of trouble with Darth Malak in Knights of the Old Republic until I figured out you have to take out the bodies he was taking energy from

A fair amount of Squareenix bosses. Like Chaos in Final Fantasy I on the Super Nintendo/SNES/whatever it was called. Or Lavos in Chrono Trigger. I also don't recall ever beating the Elite Four across any of the Pokemon games I've played, though that's likely because I had the terrible habit of only levelling one Pokemon and neglecting the others.
