Route B sounds so convoluted and too much in one. Route A makes more sense but the whole zombie idea in general is old btw [b]I Am Legend[/b] Watch it and you'll realize a lot of this is really similar

The zombie apocalypse is just too common and unrealistic, i would suggest something like nuclear war apocalypse, and then the zombies are zombies because of radiation.

Route B: During the zombie apocalypse, the earth is visited by Aliens that wipe out most of the Zombie threat. They of course took some zombies and surviving humans for "experiments" of their own. Sounds a bit cheesy.

I would go eccentric scientist over seeing the future for the reason for the vault, but that's just personal preference, as I think very few films/books/games do time related things (such as time travel) i a good way. I would also go for science zombie over magic zombie, by which I mean its a virus or some such, and they can be killed any way, not just the brain way. Magic zombies that pretend to be science zombies really irk me (looking at you walking dead)

That sounds awesome! Not even joking I like this idea. Just a question though would the whole story be focused more on the old man and his research or one of the homo superiors?
