Depends on the activity.
For Daily Heroics & PvE Bounties:
If fighting Fallen, then Striker.
If fighting Hive or Cabal, then Sunbreaker.
If fighting Vex, then Defender.
For Patrols:
If Earth, then Striker.
If Moon or Mars, then Sunbreaker.
If Venus, then Defender.
For Nightfalls, depends on 'Burn'.
For raids:
Vault of Glass, then Defender.
For Crota's End and King's Fall, then Sunbreaker.
For PvP, Striker.
