I'm not sure at this point. According to the Destiny wiki they do, but according to some of the comments its just fluid in their suits.

When you shoot their head, their helmet pops off,not their head. That goo is probably their equivalent to our water.

Pretty sure it's the air and blood escaping from their suits into the atmosphere of Mars

I can't find anything on the grimoire, but I don't have them all to begin with. I think it'd be cooler if it was their blood just so that my raid would be crazier to think about.
