If your up for a long challenge try this. Make a new character, and get yourself to Riverwood. Once finished don't go see the Jarl and start the main story, walk everywhere unless you pay for transport, you have to eat and sleep regularly, and can only pick three guilds to work into. I've done this myself and had so much more fun. I role played properly and made a blind Woodelf with vision like daredevils. He doesn't use horses or the carts, doesn't fast travel or wait. He's now level 50 odd and hasn't met a dragon apart from the very start of the game, my main story quest is still to go see the Jarl of Whiterun Edit: another idea is similar to the last but drop everything apart from your hobo clothes, from there work for everything you have, you have to eat and sleep regularly and can't go adventuring, so no dungeon diving, helps to work into the smithing and speech talents than damage, again hard work but fun all the same trying to keep alive as a lowly merchant
