Why is the FOV for most FPS games really low?

Surely I'm not the only one with a huge field of view? Because when I hold my Airsoft rifle (IRL) I can easily see the entirety of my arms - and almost my shoulders. I always turn the FOV way up in a game if I can, because usually it's set to something ridiculous where only the very front of the gun is visible, plus half the player's hands. Or is the FOV set so low to help with aiming?
