Now I know the real reason why, it was a suggestion by 9 year old son of Burnie Burns, Jack. But I think I have another reason, a more canonical reason, it's rather simple. The Theory, The Endermen are not water and/or carbon based. and as such, water is poisonous to them because the dimension/planet they like in has no H2O or to be more precise, Hydrogen. a component of the water molecule. Basically what I think is that Hydrogen is poisonous to Endermen, having not evolved in it's presence like we have. It's similar to when the Europeans settled the west, many native americans died of smallpox because the had never been introduced to the disease before and have not developed with it in their presence, thus developing no resistance to it.
