Unable to redeem Wish Token
I just realized that I have 1 Wish Token left to turn in, which will expire in just over 24 hours. When I talk to Mara Sov she brings up the empty screen that says "Sorry, there are no items available here. Please check back during a future visit to see if there is any new inventory." Is there anything I can do, or am I out of luck on redeeming this last token? I have already tried closing the game, as well as talking to her on different characters.

That means you received an extra token beyond what was normally allowed. You will just need to discard it since it’s unusable.
