If someone was a citizen of Reach, what would he be called? Hell, while I'm at it, what would the plural be for Harvest, or Tribute? Coral? Harvestian? Tributarian? Reach...ian?

We we don't call ourselves Earthians, we call ourselves Terrans (or we will since Earth is also called Terra and Terrans sounds better). I'd imagine the other planets could have Latin/Greek/Roman names attached to them which sound better than Reachians.

Human. That's what they would be categorised as. They would probably have specific names for different "countries" on Reach like Earth. So let's say Visegrad was a country, the inhabitants would be called Visegradish.
