Hawkmoon quest not showing up and nothing prior to that either
This is so bad I tried to follow any directions from YouTube guides but nothing shows up.

Your history doesn’t show you completed the introductory seasonal quest to locate Osiris on the moon. Do you see the “trail of the hunted” (or something similarly named) as a quest on the moon?
