The Covenant needed to demolish it in order to make way for a slipspace bypass. The plans had been available in the local planning office on High Charity for at least twenty-five Earth years, it's not the Covenant's fault the humans didn't bother to file a formal complaint while they had the chance.

When the covenent attacked reach they were looking for MACdonalds...They believed that there was a golden hamburger. Also the male elites believed we looked awesome and to prevent us breeding, they attacked us. That was when the prophet decided to send in the troops to wipe us out. The only problem was that we stopped using guns and gave beer to them as a peace offering. They then drunk and stupid, glassed us!

Looking for Forerunner technology buried under the planet, such as the structure in the mission the package where you defend the door to Halsey's lab. Which also implies that Cortana is made from forerunner technology.

They originally believed that Reach was the human homeworld, so they hit it hard. When they attacked Earth the Prophet was just searching for Forerunner tech to my knowledge, and didn't expect to find the homeworld.

The Covenant wanted Forerunner relics that were on Reach, and since humans were living there, it was convenient to just send the whole fleet in to take care of both problems.

They were looking for forerunner artifacts primarily. As it turned out they had technology that pinpointed forerunner tech and the prophets found out that HUMANS were forerunner descendants as they were marked with forerunner symbols. So, instead of risking a loss of faith and rebellion in the covenant they decided that humans were heretic and needed to be wiped out and didn't tell anyone else in the covenant. Fin.

Well I would guess that if you want to eliminate humanity, it makes sense to take out one of their most important strongholds and find earth. Common sense. It would be like saying, you know, I really want to conquer europe - I think Malta is the place we should focus our attention.
