A list of "ban causing" apps?
Is there a list of applications that are under no circumstance permissible to be opened at the same time with destiny 2? For example will I get banned if I have a hex editor opened? HxD to be precise.

I think anything that is going to hook the Destiny executable is going to be a banning situation. Forums for specific software might probably have a warning section about not running them with online games present.
