To me a "Cheese" especially in Destiny (more over D1) was any type of bug or glitch that made an encounter extremely 1 sided where the player was put into a position where you basically couldn't die and could output DPS unharmed or able to skip an entire mechanic all together.
Examples:
- Hiding under stairs in Archon Priest strike
- Hiding in broken window on Prime Servitor strike
- Sniping Phogoth through the doorway with armor piercing snipers.
- Shooting Rockets McDickface from behind the boxes by the stairs
- shoot oracles from top of spawn
- Pushing Atheon or Templar off the edge
- Flying over the Bridge
- Shooting Ir Yut with icebreaker through the floor
- Disconnecting on Crota
- hiding under the floor for warsat in Giant Shank strike.
Some cheese in D2
- The old Lost sector faction token farm on EDZ where you could just run back and forth through the door
- No add spawn in Calus room
- sparrow clipping into Whisper final boos room and shooting them from the ceiling

In a gaming scene the word cheese is used to describe strategies or ways of playing that are really powerful and do not require much skill from the players side at the same time. The term is widely used both in video games and tabletop games alike. You are mixing your definition of a cheese and an exploit up. While they can overlap and look similar they do have some differences in their definitions.

I say that is my definition because prior to Destiny strike boss *cheese* videos that was the first time I've ever heard that word being used so frequently to describe something. I guess it's a definition based on the context at the time.

It originally seems to have come about from old fighter games, much like the word scrub. It was used to describe the legitimate but cheap moves of certain characters. Moves that could easily be spammed and took basically no skill to use in order to win.
