I did try changing my monitor from Display Port to HDMI (60hz) but it did not fix it.
But I have a short term solution.....
Only way to stop it crashing is running as Windowed. Not fullscreen windowed. Just windowed and at a slightly lower res than the full desktop.

What is the resolution you were running it on before? By swapping my monitor I went from 1440p to 1080p.

1440p on a ASUS ROG Swift PG279Q 27"

That is exactly the same monitor I was using. When you run it in windowed mode, what resolution are you using?

1920 x 1200 at the moment.... Give it a go...
