Exactly the same here with a monster setup as well.....
Had the same issue in Beta and still has not been addressed.

Originally I couldnt get passed the initial welcome to the game solo section without it crashing. Mostly happens when fighting/killing Paskh Seering Will.
Tried:
Rebooting
Re-installing on a different drive
Virus scanner completely off and destiny 2 as an exclusion (folder and .exe).
Minimum Graphics Setting
Maximum Graphics Setting
High Graphics Setting
G-Sync Off
Setup:
Windows 10 64bit
GIGABYTE AORUS GTX 1080 Ti Xtreme 11Gb
388.00 Nvidia Driver
i7 4790k Stock
32gb ram
Soundblaster Z
144Hz G-Sync on DisplayPort
The only way I could get through that bit without a crash was to run windowed (not full screen windowed) with all settings on Low and no AA.
After completing the initital intro part I putt it to Fullscreen Windowed and everyone on max and it was fine until a few missions in and started crashing again on the mission on the boat with big waves (can't remember what it was as I am at work currently :) ).
Windows Event Viewer shows an Nvlddmkm Error (Display Driver Stopped Responding and Has Recovered)

I tried to switch out the 144Hz G-sync monitor for a 60Hz non G-sync one and I have been playing for a couple of hours now. So far I didn't have any crashes. It's probably not the solution you are looking for, but atleast you might be able to play the game that way.

Apart from the processor, my setup is pretty much the same as yours. Limiting the fps with Vsync to 72 fps did seem to make it happen less often, but it still crashes sometimes.

I did try changing my monitor from Display Port to HDMI (60hz) but it did not fix it. But I have a short term solution..... Only way to stop it crashing is running as Windowed. Not fullscreen windowed. Just windowed and at a slightly lower res than the full desktop.

What is the resolution you were running it on before? By swapping my monitor I went from 1440p to 1080p.
-
1440p on a ASUS ROG Swift PG279Q 27"
-
That is exactly the same monitor I was using. When you run it in windowed mode, what resolution are you using?
-
1920 x 1200 at the moment.... Give it a go...
