Could guardians beat goku?

Well, considering that Goku was bullet proof as a child in Dragon ball, before he even fought Picolo, I'd say no. Goku is probably the most overpowered character besides one punch man, who is literally a joke about this exact thing.

Lol no, basic bitch Guardians don't really have that much going for them. You got what? A couple guns, a grenade/slightly more powerful melee every 30-60 seconds, and every now and then some "super" ability, it would be a miracle if they could beat anyone from the Dragonball universe.

I'm going to say Goku. The only way a guardian would win is if they somehow managed to get him while his defenses were lowered (ex. Resurrection of F), but in a straight up 1v1 fight Goku wins.
