So when the Destiny 2 Beta comes out, will we be able to access it as a separate game or will it replace the current version of Destiny?

Destiny 1 will continue to function after the Destiny 2 Beta is released and after Destiny 2 is released. Many activities in Destiny 1 will continue to be available (for example: Raid Challenges and Nightfalls). However, some activities will be ending after August 2017 and will not return. The activities that will not return are Iron Banner, Trials of Osiris, and Live Events. More information on these activities (along with end dates) can be found here: Legacy Support for Destiny Activities and Events The full Legacy Support guide for Destiny 1 can be found here: Legacy Support Guide for Destiny
