Quality Build in Dark Souls 1.
I'm still only level 20ish, but I have 3 weapons that look ok for now.
I have the Claymore, Zweihander and I just got the Gargoyle Halberd.
To use Zweihander, I'll need to level up 6 more times to get more strength. Out of these which will be best? I'm still trying to get the hang of which weapons are actually good, since I have only played DS2 and DS3 and I'm not sure if some weapons are just bad in the first game compared to the newer ones.

Aim for 27str 40dex (best 2 hand scaling) and go with claymore. Because you play more with the claymore

Early on, I'd actually recommend picking up a reinforced club until you have enough strength and stamina to make the most out of one of your greatswords. It's only 350 souls from the undead burg merchant and does almost as much base damage as the claymore while weighing 2 units less, does bleed damage, and can even stun bosses. If you want another weapon that can be acquired early, but shines even during end game, the estoc is down the elevator under the firelink shrine. The estoc has a fantastic moveset, great reach, and decent damage, but the thing that really makes it shine is that it does really high crit damage. Hope some of this helps.

I personally always used the uchigatana with a dex build. Dabbled a *little* in the magical field to use the magic weapon spell on it, it amped up dps against bosses enough to five hit two of them... If you need souls, leave a sign next to a boss room and just help others defeat the boss a few times. Gained about 300,000/hr on one of my characters from the butchers block demon boss.

The zweihander is probably the best ultra greatsword in ds1 but its more of a pure strength sword than quaility in my opinion. So out of those 3 i would recommend the claymore for a quality build.
