The total encounter timer is actually longer than 2:00. So it is possible to complete the challenge mode in longer than 2 minutes. Think of it as the same as the zamboni challenge mode in the RoI book. You can take as long as "X:XX" but to unlock the mode you have to do it in less than "Y:YY"
