Ganking is fine, so long as it's not a duel.
Hiding behind enemies is fine, so long as you're being ganked.
Ganking is not fine, if summoned by a red sign soapstone.

I just hate when people disobey the dueling rules when I summon them. I killed one guy who was in the chug animation in a duel. I checked back and it was regular estus, not ashen. Another guy healed like 4 times and hid behind giants.
