If you are away for awhile your order packages will stay in your inventory. However, The variants offered will change each week till you pick them up(this is also a strategy if you don't like the options for the weapon one week you can wait till the next week for more choices).
And if he has quest guns he has mentioned will be waiting for you those will wait as well ^_^
