Oryx can only 'take' living creatures. That's why there's no Taken Shanks or Servitors. Vex can be Taken because they have biological functions.
Guardians are reanimated from the dead. There's no Life in Guardians, only Light. That's why, if we're killed, Ghost just uses Light to bring us back again.
