Can you not reverse pickpocket anymore? Just put some high defence armour in his inventory and he should equip it, then take the coat. Probably need a fairly high sneak and pickpocket level but may be possible? I remember doing it in FO3. I seem to remember you could also put live grenades in people's pockets as well which was fun.
