Uhh with your power attack, the b button when your multiplyer is high enough or something...

ive done it a couple a times considering i have been playing for like 14 hours straight any who when your dealing the FINAL BLOW with a SHARP SWORD not a HAMMER there head will pop off or if you have high enough acuracy you can simply just shoot their head off
